4/22 Maple-bourbon glazed pork chops

10/12 oz Pork chops

1 shallot fine diced

1 t. cracked black pepper

1/2 t. ground cloves

1/2 t. ground nutmeg

3  oz bourbon

3 oz pure maple syrup

salt and pepper to season chops

preheat oven to 425 F. In a hot cast iron skillet, place seasoned pork chops in pan and sear until golden brown and turn over. Finish in oven until internal temperature of 145F. Remove from pan and allow to rest. Add chopped shallots to pan and cook until translucent. Add spices. Remove from flame and add bourbon. Return to heat, the alcohol will ignite, BE CAREFUL. Add pure maple syrup. Bring to a boil., Glaze chops with the glae and serve.
