4/10 Cooking at Home with Tony (Chili Recipe)

3 Bean Chili

1# Ground Beef

1 Red Bell Pepper Diced

1 Green Bell Pepper Diced

1 Yellow Onion Diced

4 Ribs of Celery Diced

2 T. Chili Powder

1T. Rocoto or Frank's Red Hot

2T. Cider Vinegar

2 T. Chopped Garlic

1 Can Kidney Beans, drained

1 Can Black Beans, drained

1 Can Chili Beans

1 Lg Can Crushed Tomatoes

Salt and Pepper to Taste

For Serving

Chopped Green Onions

Sour Cream

Shredded Cheddar

In a large pot, brown the ground beef, drain excess fat. Add peppers, onions and garlic and cook until tender. Add celery and continue simmering. Add chili powder, rocoto, vinger and crushed tomatoes. Mix well. Add beans and cover. Simmer on low heat for 45 minutes to an hour. Season with salt and pepper. Serve with green onions, sour cream and shredded cheese as desired.
