Stuffed Banana Peppers

Tomato Sauce

1 Yellow onion, diced

2 T. Chopped garlic

3T. Extra virgin olive oil

1 small can tomato paste

1 12 oz. Tomato Sauce

1 28 oz Can Crushed Tomatoes

2T. Basil

2# pork neck bones 

salt and pepper

Saute onions and garlic in olive oil until translucent. Add tomato paste and stir until incorporated into the olive oil. Add sauce and crushed tomatoes.Add 1 cup of water and pork neck bones. Saeson and simmer for 2 hours. Add basil. Remove pork neck bones and disgard.

Banana Peppers

10 ea. banana peppers, open and remove seeds

1# bulk Italian sausage

1/2 C parmesan cheese

2 T green onions chopped

2T. red bell pepper diced

1/2 C shredded mozzarella

1/4C additional parmesan

Preheat over to 375. Clean peppers and set aside. Combine sausage, peppers, green onion and parmesan cheese and mix well. Stuff peppers and place in baking pan. Cover with foil and bake 40 minutes. Remove foil, add prepared tomato sauce to pan and top with additional parmesan and mozzarella. Return to oven uncovered for an additional 15 minutes. Serve
